So what's happening here is that the carbonic acid in the carbonated water is curdling the milk. You can get the same effect by adding any acid to milk. If you're cooking, your recipe calls for buttermilk, and you don't have any, you can substitute regular milk that you've added a tablespoon of vinegar to (stir, wait about five minutes before adding).

Carbonating water creates a small amount of carbonic acid in the water and makes the whole thing slightly acidic. Usually it's not enough to instantly curdle milk but it would certainly give off the same smell/taste as almost expired milk. This would almost certainly be very gross, even ignoring the bubbly milk part

You jest but there's a carbonated Persian drink called Doogh and Milkis is a Korean drink that they remove a lot of the lactose from. It's not a crazy concept

The only way someone would even entertain this idea is if they didn’t salt the pasta water, which is itself a worse crime than making coffee with unsalted pasta water.

maybe maker is the wrong word. I mean these cans, where you fill water in the bottom, have a sieve inlay to put the coffee and then it steams through to the can above. Okay i see now in English it is called "Moka pot" and there is a debate about the "wrong name" in my native language.

I eat cereal with water daily. It is not bad. The trick is to dial in the amount to barely wet the cereal but leave nothing at the end. I use a 1/4 cup measure. Like every morning is 1/4cup of iron fortified 'Os', little honey drizzle, 1/4 cup of: peanuts, fruit and nut trail-mix, and 3/4 cup of granola cereal. That is actually better than anything I ever had when eating dairy. You won't have sinus junk after, and you'll likely have less inflammation related issues, pain, plus feel a little better.

I tried ditching dairy temporarily for two weeks to see how I felt. That was around 4 years ago; never went back.

A broken neck and back are the source of my chronic pain. So your results may vary on that front.
