Swede yes. Fil is our national variant of soured milk. Runnier than yoghurt but still creamy, about same fat content as milk.

Imma fight y'all.

No milk. Use fil (sour milk), yoghurt or something similar. Put cereal on top, no mixing. The cereal touching the "liquid" get soggy while the rest stays crisp giving the best texture heterogeneity. Berries are awesome, frozen a super convenient alternative. If using frozen mix these with dairy before adding cereal.

Your fermented dairy of choice brings a nice crispy and fresh acidity to the meal. And if it (still) have an active bacterial culture it is super good for your gut.

Muesli is best cereal.

Honey only approved sweetener.

Why is mercury ranked second despite having the same number of medals (zero) as the unranked ones? Who did Mercury pay off for this "mistake" to happen? Is big Mercury subtly trying to influence our perception of them?

Wet lubes are notorious for attracting grime. Lube up, let rest overnight, wipe off excess day after and that grime still builds up quickly. And since the grime is stuck in the lube just washing it off isn't enough. Requires a good cleaning and then new lube.

Wax is a great option but all wax solutions I've encountered requires a very clean drivetrail. No oils, lubes, grease etc or the wax won't stick. More prep work but so worth it in the end.

I would love to go belt drive and there are high end internal hubs that offers similar range to 12spd mtb gears. Tech is there, tech is working but cost is still too high for me. More likely I'll go belt drive when (if) I get me a touring/bike packing bike.

That said this mechanical solution looks too engineered to get wide adaptation. 2-3spd gear hubs are tried and tested. That said again this combined with a moderatley priced 6-8spd hub could be cool. Cool in a frankenbike kind of way.

Still. Cool tech demo/proof of concept.

Firm supporter of local stores and businesses. It also does help that I have a few good places in walking distance and a healthy city centre. So if I want and weather permitting I can sit on their patio and wave to acquaintances.

Looks awesome. Were confused why you added lemon but after further reading, and rereading, I understood. My tip for keeping a rye starter alive is to keep in in the fridge. Take it out a day before use, feed it 12h before use, use it and put in pack in the fridge after a final feeding. I've "forgotten" starters for well over a month in there with no harm to them. As a bonus there is much less discard.

That said I bake something similar as my staple, apart from the dairy. Sometimes I use whey leftovers from cheesemaking but most of the time just plain water. I get dough, with whatever additives (nuts, seeds, whole grain), into a desired consistency. Let it rest and then bake.

The idea and methodology behind these northern breads almost makes them foolproof.

Let's stretch my theme for the evening. Just a duo between the chaotic maniacs of Alestorm and Patty Gurdy. Well produced and everything fits well together. Very good drinking music.

 

Let's take the vocals a bit harsher. Still clear by metal standards but I find Noora Louhimo's vocal more in line with the rest. Much less of a contrast compared to (for example) Nightwish.

 

Nightwish featuring Tarja. It is nice to listen to the "peak" of their vocalists. Her voice does fit the band's sound. It is all about the contrasts. And you can hear her (by then) classical training.

Old Nightwish. According to Spotify their most played track.

 

Camping season is on and that means hauling half a kg of sourdough on the trail. Just to make some flatbreads.

Recipe

About 80% hydration

One part rye flour

Three parts whole wheat flour

Sourdough starter (you know yours best)

Salt

Mix and put into container. At fire work dough into golfball sized balls, let balls rest snd then flatten them. I prefer the thumbing method. Once coals are hotHotHOT put discs on gridddle and bake. Time depends on how how your coals are. I go by feel.

 

How it tasted? Smokin!

 

It will. I am sure of it.

Hiking and camping season started for me today. Walked part of Skåneleden (Scania trail network, southern Sweden). Part of the trail along the creek in bad condition, had to climb over and under hallen trees and bushes. All while on loose footing with the creek below. Got to the campsite and got it all for myself. Nice!

As for firewood I would have had to notify the trail managers to have some ready for me. Counted on there being some already but no luck. So out into the woods and gather up deadwood.

Now darkness have fallen. It is half past eight. Time to burn!

 

Easy power-folk (?) to put on in the background. May not be something I'll actively put on, but neither skip when it pops up. Easy listen.

 

Am I diving deep into Appalachian Death Folk? Also kind of a awesome name for a music genre.
