Those companies have made billions of them over several decades. It's much more reliable to go with a one like that than to develop a new one from scratch. Submarines don't implode because it was steered by a logitech controller
Open source just means that they're not doing stuff behind your back that you're not unaware of like collecting your data. I don't think that means that the mods of a specific instance can't arbitrarily ban users or delete comments and fuck with communities within their instance.
What are you basing the existential threat claim on? I don't think I've heard a credible scientist ever claim it's going to end our specie. The yearly excess deaths estimates I've heard vary from few hundred thousand to couple million a year in 2050 - 2100.
