Wowwww that looks fantastic! I still think about the poutine 4 years after visiting Quebec. My area is not known for its cheese curds, so it’s a painful experience trying to find poutine around here! I’m still mad at this one place nearby that swore up and down that it was authentic Quebecois only to have shredded mozzarella cheese on its poutine!

For authentic poutine, it has to be curds! St-Albert preferrably.
