What do you mean humans lack the specialized digestive system that allows these animals to subsist healthily on an herbivorous diet?

Do gorillas eat all day and is their digestive tract so dissimilar from a human's? Also, I have personally subsisted healthily on an herbivorous diet for almost 25 years now.

They do actually. They eat about 50lbs a day, and their gut biome is specifically adapted to better break down greens to get their protein.
