Their settings pages are the worst; full of white space, finding what they considered "advanced" settings is usually a pain in the ass, and everything is dumbed down to a mind-numbing extent.
I've hated Settings pages with a passion since they were introduced, and always typed the full .msc I was looking for.

What confuses me is that the dimming is set to 70%, not the 20% it comes back at. And only if I leave it overnight or something, not if I just set the timer to 1 minute and test it.
I'm sure all the MIT lecturers are making sure to only use opensource textbooks and totally not requiring students to purchase the professor's own authored textbook, latest edition only, right? That would be in keeping with MIT's principles, certainly.

If you do an lspci -k | grep -EA3 'VGA|3D|Display' what does it return? Are you able to find anything in dmsg (journalctl -xb-1 for previous boot log) that would give an error message to investigate?
Maybe that's why there's a limit that's lower than the danger point?
Well, since Cosmic isn't going to be ready for a couple years yet, let's try to fix your multimonitor issue. Are you running on Wayland and what's your GPU?
