As someone pointed out, gamecopyworld used to have mini iso files for that purpose. They had a guide on how to make your own mini iso as well.

Id say those are subtitles. Either in the same folder (srt file) or they are included in the mkv. You can use a tool like mkvtool to remove them from the file or just turn them off in whatever player you are using.

I've always appreciated gog releases. I have an account there and installing their games on the steam deck is pretty straight forward from desktop mode. If given the option, use a good old games released game instead of a steamrip. It'll be better in the long run.
