I'm trying to lean away from big tech these days so I'd rather avoid having a vanilla android phone that's Google focused with lots of bloat ware. Any recommendations on what to consider?

A Google Pixel and CalyxOS or GrapheneOS. If you don’t want to flash I guess you could buy those phones with the /e/ ROM preinstalled but not sure about the quality of the hardware

Oh okay I've heard of Calyx and Graphene. Do those OS's let you use any Google apps? The only one I still use is Google Maps

Yes, they do. They have microG installed which let's you use Google Maps. If you want to get away from Google maybe try using OsmAnd or another app using OSM though.
