Did you say "bitter"? Coca-Cola? With 15% sugar content? Did you mean to ask if there are any bitterness undertones in addition to sweetness or..?

Then, no. I can't say Coca-Cola or Pepsi ever tasted bitter to me. The sweetness is for sure the dominant flavor. Followed by, maybe sourness.

Since I got covid last year, I haven't been able to drink any brand of cola. It has a weird gross flavor that I guess could be described as being bitter. I would never have described it as bitter before and I think most people wouldn't either.

It has plants in it that make it taste bitter. Coke's bitterness compared to Pepsi is why bars use Coke over Pepsi for mixed drinks.
